I didn't get any ideas for low-cal non-carb alternatives to crackers for a midday snack. I'm a vegetarian and don't have breakfast or lunch. Thanks

If you are not eating breakfast or lunch then I think your midday snack should be carb based to help keep up your energy levels during the day. Instead maybe reduce your carbs in the evening to try and get a more balanced intake thru-out the day. I usually have oatcakes (dry or with hummus) and fruit during the day and try to avoid eating too much 'junk' in the evenings.
I bought some very low carb cheese crackers in Dean & Deluca, New York.
As an ex-chef, I would imagine that they were essentially grated parmesan cheese, perhaps with some grated mature cheddar, spiked with a little chilli. This is then sprinkled onto a greased cookie sheet and baked. The resulting 'cookies' are very savoury, and great to munch with drinks.
