Balsamic caramel dressing

Just back from a lovely lunch at Marriott Hotel. The salad was dressed with "balsamic caramel" dressing - much less vinegary than the balsamic dressing I have. Does anyone know if this is available from supermarkets/specialist stores?

Lots of the more expensive balsamics taste really sweet and syrupy.We sell one which is �17.50 where I work but it really is worth every penny and you only need a tiny drop. I've been told that if you have a cheap vinegary one you can reduce it in a pan to make it less sour and thicker in consistency.Just simmer very gently.The one we do is from the Fresh Olive Company if you're interested.
Reducing balsamic, as barb1314 mentioned, is the way to make balsamic caramel. Try it yourself, it's really easy to do...
you can add a little sugar or sweetener to the reduced vinegar too, really is a sweet and sour taste and very nice as a dressing.
