Guargum comes in a pure or derivatised form. It's a white to creamy coloured free-flowing powder, free from any extraneous matter. Industrial guargum is used in paper, textiles, processing, explosives, drilling fruits and detergents. The purified form is used in pharmaceuticals, dialectic, cosmetics and the food industry. Examples where you might find it are in ice cream where it acts as a stabiliser and in bakery where it helps retain moisture in bread.
