nice easy sauce?

Has anyone any nice ideas for an easy sauce to accompany pork or chicken fillets please....

saute a couple of mushrooms and a shallot or small onion in a little olive oil (add a few cubes of smoky bacon if you like) add a clove of garlic and any herbs you like/have to hand Thicken with a teaspoon or two depending how thick you like your sauce of plain flour and thin with either milk/stock or cream to taste and again depending on what you have available.You can vary the flavours with the addition of half a stock cube ie Garlic and parsley or Italian seasoning etc.the list is endless just use your imagination.the other alternative is to start with a base of tinned tomatoes or tomato puree and bacon cubes and follow the same principal as before but use stock rather than milk or cream Enjoy
PS! forgot to say a sauce made of pureed apple cooked with cider,a hint of lemon and either ginger or cinnamon whichever you prefer is fab with pork
I like deglazing the pan after frying pork chops with white wine, then knock the heat down and stir in some cream. Add a bit of parsely too if you like.
