Bake it like a potato and serve with sour cream.
peel, boil, mash with butter and a little maple syrup, put in a grill proof dish, top with grated cheese and grill till the cheese melts and browns

Thanks to both of you. No offence willow but woofgangs suggestion has me drooling already. I have a turkey in the oven and will prepare the sweet potato mash with maple syrup right now. Woofgang, are we on the same wavelength or what??
Woofgang's first rule of cookery...ANYTHING can be improved by maple syrup and melted cheese!!
I did this one the other day, hmmm delicious! Stuffed Peppers with Sweet Potato Mash 1kg (2lb 4oz) sweet potatoes 4 red peppers 3 garlic cloves 4 cherry tomatoes red onion 1 x 250g pack Halloumi cheese Thyme leaves 2 tbsp olive oil 2 spring onions 25g (1oz) butter Preheat the oven to 200C/400F/Gas Mark 6. Cut the potatoes in half lengthways and score the flesh with a sharp knife. Place in a shallow, ovenproof dish and cook for 45-50 mins, until soft. Meanwhile, halve and deseed the peppers and place in a roasting tin. Thinly slice the garlic cloves and sprinkle into the peppers. Divide the tomatoes, halved, onion, sliced and Halloumi cheese, chopped, between the peppers and sprinkle with thyme leaves. Drizzle with 2 tbsp olive oil and season. Pour 4 tbsp water into the bottom of the tin and cook in the oven for 35-40 mins, until the cheese browns. Remove the potatoes from the oven and spoon out the flesh (discard the skins). Mash with spring onions, chopped, and butter. Serve with the stuffed peppers. HOT TIP You can cook this on the barbie - wrap each potato half in foil and barbecue for 25-30 mins, turning occasionally. Wrap the peppers in pairs and cook for 20-25 mins.
chop it up with some peppers, courgette and onion, drizzle with some olive oil and a sprinkle of oregano and bake in the oven.
Totally unrelated to sweet potato, but woofgang's culinary mantra that anything can be improved with maple syrup and cheese is bang on the money as far as I'm concerned. Has anyone tried grilled Brie or Camembert on toast with maple syrup drizzled over? I first came across it in a tapas place in Madrid and have never looked back...divine!
oh my god ive got a sweet patato in the frige too and was wondering the same thing . nice one peeps !
Woolfgangs idea sounds fab..I'm going to try it! Sweet potato is also good baked in the oven, then scoop the insides out and mash it with some cinamon (tho probably adding maple syrup at that stage would be excellent too!!)
