I have a relative who has a large syringe which he fills with brandy and then injects directly into the skin of the banana before putting it straight onto the barbeque grill for a few moments.
4 lge bananas,4 fl ozs maple syrup or rum,2 tbs lemon juic, pinch of salt,pinch of brown sugar. Peel bananas and save the skin.Mix together the ingredients then marinade the bananas in the mixture for i/2 an hour turning once.Put the bananas back in their skins and wrap in foil sealing well,save marinade,barbecue over medium heat for 15 mins turning once.Remove bananas from skins serve with vanilla ice cream use the remaining marinade as a sauce.Enjoy.
I carefully slice open the skin and cut in to chunks taking a couple of chunks out and replace with marshmallow. Then wrap in tin foil and sit on top of barbeque!
