3 course meal ideas for entertaining

my hubbys boss coming round for dinner and want to impress with a nice 3 course meal but something that is simple and fool proof to make. anyone got any ideas that they use or any each dishes they make for entertaining full stop!?

lol bubbles... so your husband wants to impress his boss with YOUR cooking....

First thing - please get your hubby to check with his boss and boss partner (assuming they are invited) if there is anything they don't like to eat or if they have any dietary requirements - now that will show consideration !

You will do better at impressing them with a meal that you are happy cooking (and have had lots of practice), so try to have a trial run first - test it all on said hubby first lol.

I often make vegetable tempura (raw slim line veg in batter, deep fried, served on a bed of shredded lettuce with a dipping sauce of chilli and soy sauce) as a starter. Then mixed vegetables (cauli, broccoli, onion, mushroom, peppers, celery, red kidney beans etc) in a strong cheese sauce) served with new potatoes and say green beans or the like... Puds in my house tend to be fruit salads - something light that can be eaten by everyone who loves fruit, with possibly some ice cream for the hungry boys.

Don't forget the wine too !
I made Prawns Creole tonight with rice. very quick and easy but looked good and wasnt bad though I say it myself. I would do a starter that doesnt involve cooking or can be prepared in advance - say prosciuotto melone which is prosciutto ham with chunks of melon - simple but very good. For desert a choice of maybe pears and chocolate sauce or a cheese board. (glam it up with bits of celery and digestive biscuits which go well with dolcellato cheese). Plus plenty of red and white wine and mineral water.
..for something easy I would go for stuff that is prepared in advance so you spend as little time in the kitchen as possible and be in there impressing your guests with your hubby.... go for a classic c0ck au van or beouf berginon ... in other words posh stew/casserole...it can be cooking for hours easy, especially at this time of year, all wintery and cosy.... for starters go for something light... a homemade smoked salmon pate, just blitz salmon, lemon juice , melted butter, and a splash of cream in the blender and refrigerate, serve with salad and some shop bought crostini, melba toast , posh crackers etc.... or really easy how about grilled goats cheese , cut ito rounds, arrange on rounds of a frenchh stick, drizzle with olive oil, top with pinenuts, grill, serve with salad and a mango, or cranberry chutney......for pud an easy option is indiviual homemade trifes, look stunning in tall glasses, or another good one is berry fruits set in a homemade sparkling wine jelly ( or you could use vodka, sparkling elderflower , or perry) use small teacups, line with clingfilm, arrange your fruits, in a pan heat water and alcohol with gelatine according to instructions, pour over fruits and leave to set, serve with a good quality shop bought icecream ..... finish off with a 3 or 4 cheese maximum cheeseboard, should include, a brie, a stillton, and a strong cheddar...


most of is can be prepared well in advance leaving you to be the perfect hostess....
As I've stated before, everyone in the entire world loves a good curry - and if they say they don't they're either lying or just hasn't found *their* curry yet. Simple solution: set meal for 3 or 4 from your local curry house. A good tipple to accompany this would be icy cold lager. When entertaining it helps to break the ice if you're hideously drunk when the guests arrive - it'll leave the menfolk with something to talk about.
