In the same pan add some sliced mushrooms and saute them, when cooked a a big slosh of cider (half a can) , let that reduce for a little then add some double cream and season, put your pork back in the pan and cook through. Delicious served with tagilitelli and broccoli or mashed potatoes to soak up all the lovely sauce.
Dust with seasoned flour. Fry in hot butter / oil til just cooked and remove from pan.
Add some white wine, a little stock and season. Reduce by two thirds, stiriing to get the crusts off the pan.
Add a dollop of creme fraiche, some ginger jam and heat.
Return the pork to the pan to warm through and serve -
Lashings of creamy mash potato and a nice seasonal green veg is good, or serve with rice, noodles, or polenta.

I just seal mine in hot oil mixed with garlic, ginger and some chilli flakes and then add some coconut milk and double cream,...about 250ml of each
Chop some veg of your choice and bung it in....sliced peppers, onions, mushrooms and even some pineapple.
I then add white wine vinegar, and a touch of soft brown sugar to sweeten.....add small amounts of the vinegar and sugar and taste each time.
Simmer and reduce the sauce down until nice and creamy.
