If I can assume you are ok making up a pie case, bake blind and prepare for the filling -
Roast a large pumpkin and scrape out the flesh
Leave overnight - or longer. this allows the flesh to dry and improves the texture as well as the flavour. drain the excess liquid from the flesh before adding the other ingredients too.
Turn the flesh into a bowl and 'beat' to smooth the flesh - but don't puree past a cream as this will be too sloppy in the pie case - adding couple of egg yolks, 8 oz sugar, 2.5 fl oz double cream, dash of cinnamon and if you really want to, a teeny drop of whisky.
Beat a couple of egg whites to a soft peak - include some cornstarch if yo want a stiffer finish to the pie.
Mix into the pumpkin, turn into the pie case and bake to set - about 40 mins in a fairly hot oven. leave to cool before serving.
