If you mean Scottish square sausage (which is the only kind I can think of) then I don't think there is any spice as such in it (just salt and pepper seasoning) Come to think of it there probably isn't much meat in the stuff either! You probably mean a more exotic 'square sausage' don't you?

Lorne Sausage (Scottish Square Sausage) Ingredients: 2 lbs Ground/minced Beef 2 lbs Ground Pork 3 Cups Fine Bread Crumbs 2 tsp Pepper 2 tsp Nutmeg 3 tsp Coriander 3 tsp Salt 1 Cup of water Just Ask Jeeves rofl. Hmmmmmmmm lots of spices in that recipe!!
