Just firm, delicate chunks of meat with a light flavour. I sometimes serve them as a first course - fried in a little garlic, chilli and ginger, with a green salad garnish and a slice of lemon. Very nice. Why don't you ask your fishmonger to sell you just one to try?
Yep, fresh scallops (spelt with an A by the way) are sweet. You can eat the orange bit (the coral, which is mostly eggs) if it`s bright and not deflated, only separating it from the meat if it would hamper cooking one side of a very large scallop. They only need about 1 min per side to fry (v. hot pan), or a couple of mins each side under the grill. I find it`s best to oil the scallop not the pan. As it`s barbie time, how about heating up their shells with a little olive oil in them over a v. hot barbecue, then put several in a shell giving them about 2 mins a side. As to accompniaments, garlic, soy sauce, mustard, ginger, thyme, dill, chilli - experiment!
