Hi jugglering
for a chocolate cake you need
4oz margarine
4 oz sugar
4 oz flour (I use whatever I have in the cupboard)
1 oz cocoa powder
2 eggs
5 tbls milk
half tsp baking powder
Just cream butter & sugar as you would normally, add 1 egg & beat it in. Add 2nd egg + little flour/cocoa powder. Fold in remaining flour mix and stir in the milk. Divide mixture into 2 microwaveable cake tins and cook each on full power for around 2 min 40 seconds. (Based on 850W microwave). Obviously you would need to adjust for different power rating. If it doesn't look quite done just blitz it for another few seconds.
It is a very quick way of making a cake and I have always had very good results.
