What is the best way to cook a duck breast? I will be doing this tomorrow and have never cooked it before!

For more on marking an answer as the "Best Answer", please visit our FAQ.I would either very hot pan fry with little or no oil (as they contain more than enough oil in themselves for cooking) cook for saem length as chicken breast or similar so that it is still pink inside, or oven bake - this is a lovely way of doing them, turn skin side down to keep moist for first half the skin side up to crisp up for second half of cooking.
roosi is right, the breast does contain a lot of fat, but you still need to use a little when pan-frying in order to get a nice colour on the skin...
...add a little olive oil to a hot frying pan, season the duck breast and place skin-side-down in the pan. Cook over a medium to high heat for 3-5 minutes, until the skin has taken on a lovely golden colour, and is starting to crisp. A lot of fat will have rendered off the breast, so pour off this fat, turn the breast flesh-side-down, and finish in a hot oven (around 200C) for around 6-8 minutes, depending on the size of the breast to give a nice pink finish.
If you remove the duck from the oven, cover with a piece of foil, and leave it to rest for a few minutes before you slice it, it will be perfect.

Thanks all, that has been a big help. My fella who I am cooking for is a butcher and knows his meat, so I didnt want to ruin it. He normally tries to take over when i'm cooking! Think I just have to try not to overcook it.
This will be accompanied with roasted ginger potatoes and steamed veg. Pretty adventurous for me really, i'm a shepherd pie and curry kinda girl, wish me luck!
