2 carrots, 2 sticks celery, 2 med. onions, 800g parsnips, thumb size piece fresh root ginger, 2 cloves garlic, olive oil, 2 chicken or veg stock cubes, salt & pepper, fresh corainder to garnish.
Peel, & roughly chop all the veg, ginger & garlic. Put into a pan containing 2 tablespoons olive oil & cook for 10 mins. Make 1.8L stock with the cubes, and add to the pan. Bring to the boil then simmer for 10 mins. Blend or liquidise until smooth. Serve & garnish with the fresh coriander.
Delicious!

Sweet potatoes are great baked in the oven, just like jacket spuds. Make sure you prick them all over first or they will explode.
Here's a couple of recipes of mine.
Sweet Potato & Apricot Pancakes
6 pancakes (make your own or buy them)
2 large sweet potatoes, 4oz dried apricots, butter, honey, cinnamon, soured cream.
Soak the apricots overnight then bring to the boil in enough water to cover the & simmer til tender. Drain the apricots, keeping the water. Chop up the apricots. Peel & cut up the sweet potatoes, cover with the apricot water, bring to the boil then simmer until tender. Mash the sweet potatoes with a little butter then add a dollop of honey & cinnamon to taste. Mix with the apricots. Put a heap of the mixture onto each pancake & roll up. Heat through and then serve with a drizzle of honey & soured cream.

1.5lbs sweet potatoes, 1oz butter, 6 thinly sliced spring onions, juice of 2 oranges,grated zest of 1 orange, 1 tablespoon cornflour, quarter pint veg stock, quarter teaspoon ground cinnamon, half an ounce of sugar, salt & pepper.
Place whole sweet pots in a pan of boiling water & cook for 30 mins. Leave to cool then peel & cut into even size slices. Make the orange sauce by melting the butter, adding the spring onions & fry for 5 mins. Put half the orange juice in a bowl and blend in the cornflour & cinnamon. Stir in the remaining orange juice and stock in with the onions. Bring to the boil then stir in the orange juice/cornflour mixture. Simmer & stir til the sauce is smooth. Season to taste. Mix the potato slices in the sauce and then serve.
This dish goes brilliantly with duck.
