One of the best ways to serve is make them part of a heaping platter iof Nachos...
You'll need a bag of tortilla chips, 1 large onion, diced, the frijoles. about a pound of ground beef. fried, two small cans of green chiles, a can of sliced black olives, a couple of cups of any good medium salso (preferably a chunky style) and lots of shredded cheddar and Monterey Jack cheese (Pepper Jack or even Mozzarella will work).
On a large baking tin, alternate layers of the chips and other ingredients, ending with a goodly amount of the cheese. Place in a 350 degree (F) oven (you can do them in the micro wave, but I think this makes them a little soggy), just until the edges start to brown and the cheese is well melted. Serve with sour cream and Guacamole on top.... Ummmm, Bueno!...
