Make a cheese sauce with Boursin Garlic & Herb cheese or similar, Put the turkey in it and warm it through in the oven in acasserole dish. Or use a chicken supreme recipe.
My OH thinks I'm barmy 'cos I think the best part of a joint of meat is the cold cuts for sandwiches!
I love a cold turkey sandwich with bread sauce and stuffing and just a tiny sprinkle of salt, yum!
Oh, and I make stock from the bones and do soup, my second best favourite food.
I've not got any leftovers this year as I was at the inlaws but i do like using lefover turkey for fajitas. just add some veg and a fajita mix and you've got a great meal.

yesterday we had it curried and today im making a stir fry with noodles and hoi sin sauce, some of the family have been having it in sandwiches, My butcher took mine off the bone so we can eat every bit, after today i think it will be gone - what does happen to be left the dogs will enjoy.
I'm just boiling up the carcass now to make stew (with lentils).
I will freeze some of the meat for curries etc. later and I'm going to do some turkey & bacon pasta and turkey & leeks in white sauce for the next couple of days
we just made jamie oliver's sweet leek and turkey pie, with frozen puff pastry with chestnuts crumbled and rolled into it. it's in the oven now and smells delicious. we're going to have it with broccoli in about half an hour.
had a turkey, stuffing, cranberry sauce and bread sauce butty at lunch time, with cold sprouts on the side - oh yum!
