why bother with a sauce? cooked properly, duck should be perfectly moist enough to enjoy without a sauce.
Why don't you try the recipe finder on the BBC food website for ideas, it's really useful. Just type 'Duck' after you click on 'recipe finder' http://www.bbc.co.uk/food/recipes/
Try pan-frying then rest them, slice and serve warm, tossed with salad leaves, pears and walnuts

Butterfly them and beat them thin then stuff them with wild mushrooms, garlic and herbs and roast in a hot oven

Also nice on bruschetta with salad leaves and a balsamic dressing.
Duck burger. Had one in Hawaii - they're the nuts.
When I do duck I serve it with a tomato sauce that I make by simmering a tin of chopped tomatoes, 4 crushed cardamom pods, 2 tablespoons of brown sugar, a half teaspoon of ground ginger and a teaspoon of curry powder. If you simmer until when you stir you can see the bottom of the pan and the sauce doesn't move back to fill the gaps again (like a jam consistency) then it's ready. It takes about 20 mins. You can scatter toasted sesame seeds over the top as well if you like which is quite nice.
