I have guests for dinner on saterday. I want to do a pork dish I have seen recently but I can not remember where. I do know it was pork, sliced potato and feta cheese with pesto sauce would there be any other ingrediant as this sounds as though it could be a bit on the dry side. any suggestions ??

I haven't seen this particular dish with pork, but I have with fish or chicken. Works best in a deep earthenware covered casserole called a cazuela, but probably would be fine in any deep covered casserole dish. Make a paste out of a large bunch of cilantro, a large bunch of parsley, a bunch of garlic cloves, salt, pepper, paprika, and olive oil. Use half of it to marinate the meat. Oil the casserole. Layer very thinly sliced potatoes, a layer of the herb paste, the meat, pungent black olives, feta cheese, marinated artichoke hearts, and the rest of the sauce. Cover and cook in a medium oven (350 or 375) until the potatoes are tender and the meat is cooked - maybe an hour, or a little longer. Serve with crusty warm bread and a good red wine!
By the way, this doesn't turn out dry - the meat stays moist, and there's enough other liquid for the potatoes to cook. If you're worried about it, you could add some broth or water just to cover the bottom.
Hi, this sounds nice :) i would add a splash of good chicken or vegetable stock or white wine.
Also dont go crazy with salt as feta is salty & pesto will have parmasan in which is also salty touch of salt & plenty of pepper
