its my dads birthday tomorrow and i wanted to make him a cake. does anyone have any recipes for a lemon cake. nothing too complicated thanks

8oz self raising flour
4oz butter
8oz caster sugar
grated zest and juice from 2 lemons
2 large eggs
2 tablespoons lemon curd
mix the flour & butter together until it looks like crumbs. Add the sugar, lemon jucie, lemon zest, eggs & lemon curd and mix well.
Put the mix into a greased baking tin and cook for 45 mins, gas mark 4 or electric 160.
If you want a topping.....
7oz cream cheese
2oz butter
4 tablespoons sieved icing sugar
mix the ingredients together and spread on top of the COLD cake.
Sorry I can only give you the quantities in imperial, but it's my gran's recipe from 50 years ago!

6oz caster sugar

3oz drinking chocolate powder
3 medium eggs (beaten)
1 tablespoon warm water
Cream the butter/marg and the sugar until creamy, then gently mix in the eggs. Sift in the flour & drinking chocolate, add the water and mix.
Divide the mix between two greased & lined sandwich tins & smooth the mixture so the surface is even. Bake for 25 mins @ gas 4, or electric180c/350F
Buttercream filling to sandwich the cakes together:
4oz sifted icing sugar

2oz drinking chocolate powder
a little water to dilute if needed.
