Depends what kind of soup it is really. If it is listed under healthy extras then you can have it as one of those, if not then you need to use your syns. Then again, if you made it yourself and it is vegetable soup it could even be a free food. Like I said, depends what kind of soup.
As for green dinners, have you ever tried Quorn? I used to have chilli or spg bol made with Quorn mince. Or curry and rice made with the chicken style quorn pieces.
