Personally if I wasn't going to use them in 2 days from fresh, I would freeze them.

Agree with mortar tube.

I always roll each sausage in clingfilm and then in a plastic bag, before freezing then you can use as many or as few as you like and it stops them drying out.

I would ask the butcher if he made them and when. He should be able to advise you how long to keep them.
