Anyone got any ideas for a lactose free, low carb, preferably warm, brekkie?  I'm not a finicky eater, but it's too cold to eat fruit for brekkie at the moment!

What about eggs?  Florentine, benedict (ovbiously without the muffin!) or a tasty omelette.  Or you could make quiche without the pastry by pouring the filling into a muffin tin and baking. 

Alternatively, you could try warm fruit - apple, berries from the freezer and some soaked prunes/apricots if you like heated in a little fruit juice on the stove or in the microwave until soft. 

Or... go all Scottish and have some kippers!  They microwave really quickly (but a bit too boney for my taste)

bacon etc.  yum.  or, and this is novel, experiment by placing various fruit in the microwave, those which don't explode or disintegrate should be ok. ish. in a way.

Thanks sprogglin, perhapsI'll try camille's ideas first though if you don't mind.  Not that there's anything wrong with your idea.

 

I was also thinking, maybe I could make porridge using soya milk.  I'll give that ago as well methinks.

I recommend you buy a smoothie maker, and make yourself a breakfast smoothie every morning. You can put in as much fruit as you want, and mix in with juice or yoghurt. Very tasty and incredibly good for you.

Natalie, if you're trying porridge with soya milk you might want to add a little sugar (or maybe a few berries) as soya isn't as sweet as cow's milk and the result can be a little bland.

 

Or you could reheat a meal made the night before. I've had vegetarian curries and chillies for breakfast and they make interesting alternatives to cereals and fruit.

I have the same problem and eat porridge oats made with water.  You get used to it I promise.
Natalie, I have porridge with soya milk most mornings.  I add some sultanas and stir in a spoon of honey.  I also make it much runnier than the recipe suggests.  Really yummy and keeps me going for ages.
