Recipe for duck

Can someone give me a recipe for duck - i've got a whole one but I don't want to do it with orange, cherries or in pancakes.

not had it in plum sauce but that's veering towards the pancake flavour which I want to avoid.
any other ideas?

would you cook the whole duck first & then use the meat, or take it off the bone?

You can braise it. Joint it up and fry it off to get some of the fat out from under the skin. Add to the pan some sliced spring onions, garlic, ginger and chopped red chilli, a tablespoon of dark brown sugar and allow to caramelise a bit. Pour over some chicken stock (fresh for preference, cube if you must), some soy sauce and chuck in a star anise or two. Bring to the boil, turn down to a simmer, lid on, braise til tender. Cool and leave overnight if you want to, to allow the fat to rise to the surface for removal and for flavours to meld together. Serve with noodles and wilted greens, sprinkled with sesame oil. This works really well with the leg meat, then you can use the breast for something else. If you want to use the whole thing, just add the breastmeat 10 - 15 minutes after the legs.

cook the duck take it off the bone use veggies of your choice plum sauce is nice as is a nice sweet and sour and add your meat for the final few mins of ccoking serve with egg noodles lovely

I do a spicy plum sauce with chilli's and ginger.

How about honey roasted.

Check out Gary Rhodes...I followed one of his recipes for honey roast duck and it was lovely.
never tried duck pie do you think that would work???

i had a lovely receipe for duck breast in red wine sauce, can't sodding find it now, will keep looking x
found it - my god i posted this in 2006!!!!


2 boneless skinless duck breasts cut into bite size pieces, pur i tablespoon olive oil into a pan over a medium high heat. When very hot stir fry the duck strips for 1-2 minutes until seared all over. Remove with slotted spoon and set aside. add 2 finely chopped rashers of streaky bacon and 1 chopped shallot into the pan and cook for 4-5 minutes until onion has softened. add 50ml red wine and bubble for 1 min. add250 ml fresh chicken stock and simmer 1-2 mins. add 175gr fresh or frozen peas and simmer 2-3 mins. mix together 1 tbsp butter and 1tbsp plain flour together then wisk into sauce until thickened, season, return duck and heat through. serve with mash or jersey royals.

Been off AB for a while - discovered Facebook!
Been on holiday to Goa/India for 2 weeks and ended up quite ill just before we came back & after! only just recovered after another 2 weeks! I've never felt so ill! played havoc with my blood test results and had the usual vomitting/the runs. I've lost a stone in 2 weeks.
My son's had swine flu
and my in-laws who stayed longer have got Chikungunya - they flu back tomorrow.
Safe to say we don't want to go back!

well you've certainly had a packed few months, glad your feeling better now and look at tit this way, loosing a stone now mean you don;t have to worry about eating loads over xmas!
