can anyone help with a recipe for meat loaf plz

For some reason, it appears that you are not getting any responses on such an easy question... try this:

1 pound lean ground beef

1 small dried onion, chopped (but not too finely)

1/2 green pepper, chopped (again, not to finely)

1/2 cup tomato paste

1/4 cup tomato ketchup

3/4 cup soda crackers (put them in a plastic baggie and roll them with rolling pin, but not to finely)

1 egg (only one!)

Salt and pepper to taste (We like a little Paprika or red pepper, some like a little garlic salt)

Mix all ingredients thoroughly, but don't "squish" it together too much

Place in bread loaf pan, but only for shaping.  After pressing in loaf pan, turn gently out onto foil covered baking sheet.  At that point, you can cover the top and sides with additional ketchup or barbecue sauce.  Bake in 350 deg F oven for one hour.  Or alternatively, try spooning the mixture into oiled cupcake or muffin tins.  Mound it up about an inch above the surface ot the tin.  It doesn't take as long to bake that way... only about 45 minutes.

If the loaf tends to fall apart, use fewer cracker crumbs next time.  A replacement for the crackers is the croutons sold for salad toppings.  They come in various flavors.  These should be rolled as well in the baggie, but not to dust... Enjoy!

A really easy meat loaf recipe is as follows.

 

1lb lean minced beef-----1 onion chopped-----1 large carrot peeled and grated-----1 packet of Batchelors Minestrone soup-----1 egg to bind-----mix it all together-----put it in a non stick loaf tin-----cover top with foil and bung it in the oven-----1 hour on 190-- or gas 5
