Why is the sliced roast pork sold at the deli counter in supermarkets an off-white colour whilst bacon joints and gammon are red in colour after cooking?

Am I missing something here? The colour just doesn't seem to make sense for pork.

Maybe it is to do with the salt content in the bacon.
It`s to do with preserving ham and bacon better described here......http://hubpages.com/hub/How-To-Cure
