I'm defrosting some stewed apple for tonight's dessert and wondered what I could do with it. I usually do crumble or Eve's pudding but was wondering if any of you have other suggestions.

i have a whole recipe book about apples which was my mum's. how about apple amber?
fold 2 egg yolks into the puree, put into a suitable dish and bake 180o for about 30 mins. whisk 2 egg whites and fold in 1-2 oz sugar, pile on top of apples and put back into a cook oven to brown the merangue (about an hour until set). good hot or cold. or you could put it into a pre-baked pastry case.

how do you feel about snails coccinelle??
another one: orient pudding - beat 2 egg yolks with 4-5 oz fresh bread cumbs and knob of butter. put into a souffle dish and top with merangue made with 2 egg whites. bake 30 mins 180o.
whoops, should have said to add eggs and breadcrumbs to apple puree.
merangues filled with apple cheese:beat half a pound of cream cheese into apple puree made with 1lb cooking apples. chill the mixture and when cold pile into merangue shells. you could add a few sultanas, or redcurrant jelly, or some cinnamon, or a spoonful of chopped nuts.
swiss apple gratin: apple puree made with 1lb apples. 3-4 oz zweiback (biscottes), tblspn sultanas. crumble the zweiback or process until they're in coarse crumbs. layer apple puree and zweiback in baking dish, finishing with zweiback layer. add topping: beat 3 egg yolks, 3 tblspns caster sugar and 3 tbspns curd cheese. add rind of 1 lemon and a little lemon juice. pour over the puree and bake for 20 minutes until custard is set. whip egg whites and a little more sugar, spoon over the dish and put back in oven until merangue browns.
this should be served a little warmer than room temp.
ooh apple amber is delicious.I had forgotten all about it. Will do that next time I defrost stewed apple instead of making a crumble.

Thanks for all those ethandron; will try some out but today it'll be the apple amber as I have all the ingredients for that (no cream cheese or biscottes). I don't like snails as I don't like the consistency of them but hubby loves them. How are you doing? Ready for your holiday in France?

oh yum, caramalised condensed milk and pureed apples :). my own favourite is orient pudding.
been to france and come back coccinelle, got back yesterday. have decided france is our favourite country having tripped around germany, austria, italy and finally france this time, it was just like coming home. spent a week in the french alps, lying there toasting ourselves in the hot sun looking up at mont blanc. will never understand why the french have a reputation for being unfriendly and stand-off-ish or aloof, we've met some lovely people and everyone is really helpful. the one and only time we had a slight problem was last time the world cup was on and a young french bloke spat at our parked car. he didn't realise we were walking along the pavement a few yards behind him so we bleeped the car remotely which made him jump, and he turned round, shrugged his shoulders and gave us an embarrassed smile. we smiled politely back, got in the car and drove off, giving him the finger as we did so :) :)

what about frogs legs, do you like them? never had them myself. are you full of visitors at the moment coccinelle?

Yes, the French in general are nice people though some are very anti-British and let you know it! They hate the fact many foreigners don't attempt to speak their language and expect them to speak English 'after all it's a universal language' we hear a lot of Brits say. Parisians are another kettle of fish, even the French don't hold them in their estime... rude, arrogant, unpolite, insolent are words you hear.
Never had frogs legs; the problem is that nowadays they are shipped in from China and the chinese just pull their little legs off while still alive so it's a no no for me and a lot of French people too.
Visitors start coming as from next week once the majority of my lessons finish so a busy time ahead.
what lessons coccinelle, are you a teacher? are your visitors friends and family from england? which department do you live in (i understand if you'd rather not say)?
we've travelled a lot in france over the years, and now we're both early retired we've been spending a lot more time there, usually 6 weeks in may/june and then another 4 once the schools go back in september. i've had some really funny and interesting conversations with french people using my not-very-good-school-girl-french, one particular one with 3 elderly ladies on the quayside at cancale in brittany. they were sitting there in the sunshine eating a dozen oysters each, freshly caught, and we had a laugh about what oysters are supposed to be good for as they eyed up my husband!!

The apple amber was a success. I made individual ramekins and might try one large one next time. My visitors come from all over; France, England, Australia, Thailand and Germany. It's just that the family are scattered around the world so can't just pop in for a few hours. We're only 50 minutes away from Paris on the train (north) so visitors usually like a trip in there. I'm seriously considering being a private guide as I know it back to front!
France is a lovely country and so varied in weather, scenery and traditions that you can't really get bored with it. The majority of French people holiday in France, probably due to language but there's so much to see.
Ah yes, oysters are very good for you LOL
could be another job for you coccinelle, a tour guide. only been to paris once, we thoroughly enjoyed it and always promised ourselves we'd go back, so far haven't managed it though. do you think you'll ever come back to england to live?
i can see why the french holiday in france, just like you say, so many very different regions, it's like half a dozen countries in one, even the architecture is so varied region to region. next time we go we're going to really explore brittany, only scratched the surface there. we were in normandy for the 60th anniversary celebrations of d-day, it was terrific, what an atmosphere!

ps. got lost in a small french town on this trip and asked a young french lady for directions. turned out she taught english and spoke better english than i do! she was so nice, don't know who was more pleased, me or her!!
