The recipe i am going to try is using parmesan and mascarpone,i know that its quite bland,anyone used polenta, any tips?

Have to be honest and say it is a bit bland but I have it with a spicey tomato and onion relish - it goes well together. I make it by adding the meal slowly to boiling water and stirring all the time until it's a thick consistency - also add a little salt. Keep cooking for about 10/15 minutes. If you use this method just watch the mixture doesn't spit out at you whilst you are stirring, specially at the beginning.
