on many unfrozen chilled quorn products, it says on them "once opened consume within 24 (or48) hours"

why has it got such a low fridge life?

it has no meat fish or dairy in...so why?

It does tend to dry out and harden and it is organic so I suppose it makes sense You can get it frozen though. I don't tend to use huge amounts at any one time so I keep a big bag of frozen and just use what I need when I need it. It's a lot cheaper in Iceland too.
Quorn is made from a fungus, which suggests that it might also provide a good medium for fungal growths. So the risk might be more associated with the rapid formation of mould than with bacteria. (Refrigeration can substantially slow the development of bacteria but it's far less effective at slowing mould growth).
