Has anyone got a good recipe for a Corned Beef Hash (for two)? I know there will probably be loads of recipes on the net, but I'd rather have one from an actual someone...if you know what I mean....smile! Ta Muchly.

large tin of corned beef
2 onions chopped
4 carrots diced
5 large potatoes diced
dash of tomato ketchup or brown sauce
put all the above in large pan with water, not too much, you can always add more if its too thick.
cook on low heat for about an hour at least, keep stirring so that the potatoes break up a bit and makes the gravy thicker.
even better if you have a slow cooker,(which are fantastic for all in one meals) put the contents of the hot hash into the cooker on low and leave it all day. even if you go to work.
this will make more than enough for 2

Saute a large chopped onion with a 1 or 2 parboiled potatoes that have been chopped in 1/2" dice. When onions are translucent, add the corned beef....continue to stir and fry. When it is all blended together, flatten a bit,and cook until brown. Flip over, and cook other side. Serve with sliced pickled beetroot....never thought I would like the beetroot but was convinced by a Northern friend.
