Night maizie. JMR the Thai Salmon sounds lovely, think I'll have a go at that.
Sorry mazie, did have one but now I just throw everything in myself. Can't find the recipe book since I moved but I'll try and dig it out and post the recipe for you.
Blend in oil, 1tblspoon of guram masala, half tsp chilly powder, 2dss dania, 1dss cumin. (Sauce)Fry lg sliced onion & 3 mashed garlic cloves, 3 pierced cardomoms. Add blended mix above fry for 10mins, then add tin tomatos, mixed veg & meat/season. Bring to boil and simmer till meat is soft. Add little water if too dry. (if chicken, remove skin).

Meantime, rinse cup of rice (for 2ppl). Cover rice with water/salt & heat in microwave for 10mins, let rice dry in container. (cling film over to stop spill).
Tambo, that's the way my Mum makes curry. She make a mean curry chickpeas and potato.
its my way.....most recipes are not honest enuf to include all the spices.
My curry includes the basics of

Some kind of meat, prawns or vegetables....but usually chicken
A jar of Pataks paste....there's lots to choose from
Big tub of Greek yoghurt
Ginger
garlic
Chillis (according to taste)

marinade chicken in a generous amount of the paste, ginger, garlic and chilli

Stirfry the chicken/paste until browned (the smell is devine by now !!!)

Add yoghurt

Simmer until chicken is tender and cooked but not over cooked.

Add a pinch or two of sugar or drizzle of honey to sweeten a bit if needed

Add a sachet of cream coconut if you want

Right at the end, add a big handful of chopped, fresh corriander.

Making curries is all about experimenting. Write it down and then change things a little. None of my curries are the same.....some are awesome, some not so good. You could replace the Yoghurt above with a tin of chopped tomatoes or for an authentic Tikka Massala, use a tin of Cream of tomato soup as the sauce and add some cream.

Don't forget that you can also add chunks of pineapple, sultanas, apple, onions, peppers, mushrooms or anything you want to the curry.

Forgot to say about rice.

I always add 10 cardamons (crushed with a knife slightly)
10 cloves
one star annise
good sprinkling of cumin seeds.

When the rice is cooked, i remove all the above (except the cumin !!!) and you have lovely flavoured pilau rice.
