I regularly let my step son make his own pizzas (one of the very few things he will eat) - at least if we do that, I can slip some pureed veg into the tomato sauce and he doesn't have a clue. However, with the spare dough, I've tried making up a pizza and freezing it, but the base is always soggy and never cooks as well. Tonight we are doing "Pizza Factory" again and I know I am going to have a whole load of dough and tomato sauce left over. How is it best to store it? Should I just cook the base and then freeze it, or cook the whole thing and then freeze it?
You need to roll out the dough as if making a pizza and then cook it for five minutes. Once cooled you can then freeze it, make sure it is really well wrapped.
I freeze my pizzas raw and they always come out well. The trick is to roll the dough quite thin, have them out on the side defrosting a little whilst the oven heats up, and cook them at around 220c.
