Runny honey..

Just dug some out of the cupboard to use for dinner tonight. Some of it's still runny but the rest is solid. It's dated Feb 12...kitchen is quite cold so could that be the reason?

what are you using it for?
Could be ... could just be cheap honey. A high fructose one will be less prone to crystallisation. 70°F is 'recommended' for storing honey.

Use the runny part, microwave the rest for a few secs. :-))

Thanks everyone. I'm either doing honey roast duck...or honey carrots to go with the duck.
stand the honey in hot water and the honey will uncrystalise and ready to use

Got the Duck for a fiver as well....bargain.
i used some manky crystalised old honey for my special valentines meal on saturday evening, we're still here to tell the tale, it'll be fine.
Honey does not go "OFF" just turns solid as yours seems to have done. All you have to do is warm, and I mean only warm, some water and place the container in it until the solid part becomes liquid again. Alternatively, remove the top and place in a microwave for a few seconds, check and repeat the process but do be careful and do not overheat the container if glass or plastic.

Honey is said to be the only food that will never go off......the crystallisation is just due to the cold.
Honey packers are required to show a 'best before' date, or 'best before end' followed by the year, marked on the jar. They usually opt for a date 18 months from packing, or year only if it's to be more than 18 months. In fact, honey will stay in good condition for years longer than any date shown.

So the dilemma now...do I use it on the duck or the carrots?
You can zap it in the microwave. This brings it back to liquid. Give it just a few seconds - say about 6.
Use it on the duck. For the carrots, add a dessert-spoon of sugar to the water to boil them, and it'll bring out a real carrot flavour.

I usually put a bit of sugar in with carrots....I do prefer them roasted though
