Why does mozarella sometimes come in a milky white ball and yet you can buy grated yellow mozarella??

The ones that you can grate are ideal for pizza but I use both for pizzas. The milky ones are usually used in salads like basil, tomato and mozzarella.
The best mozzarella is made from buffalo milk, most popular in the UK is mozzarella fior di latte which is made from cows milk. Both are sold in a mild brine solution.

There are also blocks of semi-hard mozzarella which (I think) are sometimes sold as Danish mozzarella, they can be semi-dried mozzarella or processed.

The grated stuff you find is usually mozzarella 'style' which means it melts easily and is usually made from a concoction of milk powder and vegetable oil.

Personally, I'd stick with mozzarella di bufala or fior di latte and avoid all the others.
