Italian sauce
Last night I took mrs sammo out for an Italian meal which was very nice I had a chicken dish which had a creamy tomato with chile sauce , It was lovely and would like to have a go at making this myself.. Anyone got the recipe for this sauce?

Put a good slug of olive oil in a pot, add a chopped onion, chopped chilli and a clove of crushed garlic. Fry for around 5 mins on a med heat until translucent. Add 2 tins of peeled plum tomatoes and a bottle of passata. Allow to come to the boil and simmer for 2 hours. Season and add fresh basil. This will make enough for 4 portions so any you don't need you can freeze.
To make the creamy sauce:
In a frying pan fry some garlic and 1 chilli(more if you want it hotter) together, fry for around 5 mins on a med heat. Add a splash of white wine and cook out the alcohol. Add a couple of ladles of the tomato sauce, heat through. Add some double cream and bring to a simmer. Season and pour over chicken or fish and you can also use it stirred through cooked pasta.
I don't know if that is the exact one you had but that is how my Nonna in Italy makes hers. Enjoy!

I used to do this for the grandkids when they were smaller, hence the whizzing bit 'cos they didn't like lumps

1 GOOD PINCH OF DRIED ROSEMARY
2 PINCHES OF DRIED BASIL

SALT AND BLACK PEPPER PLUS SUGAR TO TASTE.
PEEL AND ROUGHLY CHOP THE ONIONS AND GARLIC AND WHIZZ IN A FOOD PROCESSOR (A LA JAIMIE)
FRY THIS OFF IN A LITTLE OIL (YOUR CHOICE) UNTIL SOFTENED.( ABOUT 2 MINS). ADD THE TOMS AND THE PUREE PLUS THE WATER. CHUCK IN THE HERBS AND SIMMER FOR ABOUT 8 MINS. BLITZ THE SAUCE WITH A HAND BLENDER AND ADD SUGAR TO TASTE. PUT IN SALT AND PEPPER, AGAIN TO TASTE.
A CHICKEN STOCK CUBE OR A VEG ONE WILL HELP IF YOU FANCY
YOU CAN ADD ANYTHING YOU LIKE TO THIS SAUCE.TUNA, CHICKEN (cooked) COOKED SMOKED BACON OR FINE DICED PEPPERS. I ALSO TO ADD A LITTLE CHILLI IN MINE.
IT ALSO MAKES A GOOD TOMATO SOUP IF YOU ADJUST THE LIQUID CONTENT
HAPPY COOKING.
Add cream if you want for richness and colour.
