Option off the Astry site for Moroccan recipes:

1 large Onion,; finely chopped
6 Garlic cloves,; peeled and finely chopped
cup Finely-chopped red bell pepper; (optional)
2 teaspoon Finely-chopped jalapeno pepper
6 tablespoon Finely-chopped fresh cilantro
 cup Finely-chopped fresh parsley
Juice of 3 lemons, strained
Grated peel (no white attached) of 2 lemons
Grated peel (no white attached) of 2 oranges
1 teaspoon Turmeric
2 teaspoon Saffron
1 teaspoon Ground coriander
1 teaspoon Paprika
1 teaspoon Ground cinnamon
2 teaspoon Cumin seeds
Salt and freshly-ground black pepper

Combine and marinade the meat - leave as long as possible for best flavour.

This is a dry marinade - add olive oil for a wet version. To fruit it up, add orange segments, lemon slices or add apricots when cooking, and if in couscous or a tagine, use sultanas too and include olives and toasted almond slices in the dish as well - both tradtional ingredients.

Hope this helps..
you can season chicken with plenty of herbs and spices and extra cayenne pepper. roast in the oven and baste with orange juice.

Thanks for the replies. I tried the one from Nickmo. I think so much lemon overpowered the other flavours, it will need a bit of tweeking.
