6oz Margarine
6oz Caster sugar
6oz Self Raising Flour
3 eggs
1 1/2 tsp coffee essence
Cream margarine and sugar until light and fluffy
Beat in eggs one at a time adding a little flour with each
Stir in coffee essence
Gently fold in remaining flour
Place mixture into greased 7in cake tin or 2 x 7in Sandwich tins
Bake at 180 c 350 f Gas mark 4 for approx 25 mins in 2 tins or 45 mins in one tin
when cool fill and coat with coffee butter cream
Coffee Butter Cream
4oz butter or margarine
8oz seived icing sugar
4 tsp coffee essence
Cream fat, gradually add icing sugar and cream together
add flavouring
