hi. i am just wondering why you need to make 'diabetic' icing. the amount of icing on a slice of wedding cake is very small and can always be put to one side by the person eating the slice, which many non-diabetic people do anyway. or are you expecting a lot of people with diabetes? my son has diabetes and on occasions such as weddings, parties, etc., allows himself a very small amount of whatever he wants, as recommended by all diabetes specialists. we have always been told to steer clear of special 'diabetic' products.
