using up cupboard remnants!

I have given my kitchen cupboards a bit of a spring clean and have been left with a few random ingredients. They are:
Desiccated coconut
Tamarind block
Cashew nuts
Whole cardamon
Camargue Red Rice
I would be interested to hear any recipe suggestions you might have using the ingredients. Obviously I can add other ingredients to them. Also, I'm not expecting that all the ingredients are all included into one recipe.

calling out for a chicken curry with red rice! possibly not all the coconut (depending how much there is) & only need to use a little tamarind

I also use up cardamom just putting a few pods in the basmati rice for a lovely scent .
try www.RecipeMatcher.com for any ingredients you have left over or food in fridge..it comes up wth all the things you can make -saw it on TV
I went through my mothers cupboards recently and found food in there four years older than my nine year old son!!! can anyone beat that??
If you've not used them for a while then bin the lot.
