crab meat
I saw crab meat when I was shopping yesterday and I bought it because I was sure I had a recipe for it in the house. Can't find the recipe now though!
I will google it for ideas, but was wondering if any of you have a favourite crab meat recipe?

I have seen literally hundreds of recipes for crab cakes in many, many cookbooks and online. But, the very best use of crab meat was the way my grandmother made crab cakes down in the Bayous of Louisiana, on a wood burning stove. Here is the recipe, I've never measured any of the ingredients, but this is a no fail dish. I hope you enjoy it:
About 1/2 pound crab meat
2 medium sized potatoes ( boiled and coarsely mashed, small chunks)
1 small onion, diced
2 medium eggs
1 green pepper, diced (here in South Alabama and the South in general, we call these bell peppers, because they resemble bells) (optional)
1 small amount of green onions (optional)
1 cup bread crumbs
salt and pepper to taste
In a large bowl combine the coarsely mashed potatoes, crab meat, eggs and bread crumbs. Gently combine those ingredients until the eggs are fully incorporated. Add the remaining ingredients, and gently mix until well combined.
The mixture should be a little wet. Take a portion in your hands and make a ball, then flatten out to about 1/2 inch.
Lightly flour both sides of the patty, and gently place in a skillet of oil heated to about 250 degrees. When bottom side is lightly browned, turn over and brown the other side.
Drain on paper towel.
Eat and enjoy.
