Apple Pie

Does anyone have a good recipe for a good apple pie? I would like to make the pastry a "fluffy" pastry?

Hi I tried to post the recipe on here but it was too long! If you go onto Britains Best Dish website and look at the puddings, there is one for Traditional Apple Pie (by John Blenkinsop). I used this recipe just for the pastry which was lovely, I am not a huge fan of apple pie so did not try the full recipe. I seem to remember it made the finals of last years series and the judges were saying it was the best apple pie they had tasted. When I made the pastry, I just used fresh milk instead of sour and it turned out fine.
