Hi, I have two lamb shanks in the fridge that I want to cook for dinner tonight. I also have potatoes, swede, leek, turnip and carrots. I quite fancy a casserole type dish where I can pop it all in one pot to cook but I would like it in a nice gravy. Any ideas on what to do with it and timings etc? Thanks.
Make slits in the lamb shanks and put slivers of garlic (and fresh rosemary if you have it) in the slits.
Stand each lamb shank on a large piece of tinfoil and pile half the veg around each shank. Season everything, add a swig of olive oil. Scrunch the sides of the foil up and add a swig of wine to each shank/veg. Scrunch the foil up so everything is covered, like a parcel.
