Can you substitute a bit of your sr flour for cornflour and add baking powder when cooking fairy cakes..? I was just reading the corn flour box (as you do!!) and it says it makes lighter cakes.....Had never heard of it in a cake recipe though??

Hey i hadnt heard of it neither, sounds intresting ive just looked it up and yes you can use it and the sponge will be much lighter....hope this helps you :0)

4 oz. cornflour
1 oz. flour
2 oz. castor sugar
2 oz. butter
1 tspful baking powder
1 egg
Little milk


How to make cornflour cake:
Cream the butter and sugar, and add the egg beaten with a little milk.
Then add the sieved cornflour, flour and baking powder.
Put into a prepared cake tin and bake in a moderate oven for about 1 hour.
