Nothing to do with the health of the teeth. Could well be to do with the quality of wine. Many natural red dyes are sensitive to ph (acid/alkaline). When affected, red goes towards blue. Could be an interaction between what your girlfriend was eating (or at least the ph of her mouth) and the natural red colouring of the wine.
This used to happen to me all the time and I was never sure if it is because my teeth are more porous? or because I smoke? or i have plaque on the them and the wine stains the plaque? maybe I have less saliva? Whatever the reason yes it is common and i do not believe it is due to teh quality of the wine...the only way to stop it is to not drink red wine. Believe me, I have experimented.
