One of the kitchen surfaces joints has started to rise, obviously water has managed to get into it, is there anything that can be done to stop it getting worse and requiring replacement?

You could seal the joint against water but two things make this a particular challenge. The best sealing agents are likely to result in a stark colour contrast at the joint and the best water repellents to impregnate the chipboard under the plastic coating are incompatible with a kitchen due to the risk of contamination with food/culinary items. Some sealants present both hazards.
Ok barmy, you can buy T shaped aluminium pieces that would fill gap and fit with sealant to prevent any further water ingress. I will try and find a link.
