I currently have tiles on the kitchen floor, which have been there for years (probably ages before we moved in), and I dont really like them. Is it possible to stick adhesive vinyl tiles on top of them, or would I have to remove the tiles first?
Any other ideas what I could do to replace the tiles quite cheap and hassle-free??

The best option will be laminate flooring. It is a floating floor laid over whatever with a membrane underneath such as thin foam sheet. Laminate is really easy to lay, is warm underfoot, hardwearing and easily cleaned.
You don't say what the old tiles are made of. But if you lay vinyl tiles, or sheet vinyl, over ceramic, you'll soon see the impression of the old tiles coming through. Mjw's advice is sensible - but don't splash too much water around!

current tiles are ceramic. i want minimal mess and fuss when replacing, so would laminate flooring be a good option?
Too right!
If you pay a little more you can get laminate suitable for bathrooms which is more water resistant but if only splashes from the sink are involved cheaper stuff will be fine.
After laying laminate in our kitchen we found it so good it has found its way throughout the house.
We love it. We have rugs here and there though.
Floormaster does a system called Aqualoc which you use with an underlay. This will take care of the ceramics underneath. Product available from B&Q.
if you get two-3 bags os self leveling latex screed and just mix and pour....will take care of that....then lay whatever you want over it.
No need to do anything like that just use the Laminate underlay.
