We always have foxglove in our garden but this year we have a white one which is unusual. How can we collect the seeds so that we can have more in the future.

Strong chance the seeds set by the plant will not always be white. They are not fussy what other colour foxglove pollinates them.

I always let the seeds drop and sow themselves and replant the seedlings.
I had white hollyhocks and collected the seed. Sadly they came up a pale peachy colour so as slack alice says they may not come up white but is worth a try collecting some seeds and letting some self seed.
I grow foxglove of many shades and always play a little guessing game to predict the colours of the forthcoming flowers and in doing so I've noticed the ones that turn out to have white flowers, usually have a paler leaf as apposed to the purple which tend to have darker green leaves with a tinge of purple, particularly in the veins and stem.
I think you could maximize your chances by saving some seed from the white ones, ready for sowing next spring.
