Are anemones attacked by birds or rodents? This is the second year running that I have bought anemones in pots and overnight, before planting them, the flower and stalk have been chopped off and disappeared. Both times it was a blue flower and one red one.

Snails? Did they actually take the flowers away?

The stalk and flowers have vanished completely. Last year one was planted in the soil and I found it laying on top of the soil with the stalk cut and the roots dug up. This year I only bought them on Friday and left them out overnight to find one blue flower and stalk gone completely and a red flower with the stalk almost cut through. Is it known that snails attack anemones?
Could be squirrels, they are forever digging up, and/or eating my plants
According to Gardeners Question Time could be mice. They like Hellebores as well.
A similar thing happened with some of my newly planted primulas, I put it down to birds but can't be sure.
