How can i work out what is visiting.

It is a new shed too!
We left a bag of seeds on the floor - all eaten
peanuts, mealworms and bird seed on shelf - not touched
dustpan brush partly nibbled and a thin swirl of the plastic bristles in pan (nest?)

We have had field mice, rats and squirrels in the garden.

I don't want to go rummaging in case it's a rat, but all can climb seems very confusing.

mice.
Possibly mice or rats, look carefully for droppings and try to match them with some images on google.
If the shed is new the rodents may be a bit wary at the moment.
I'd play, wise and put the nuts etc in a lidded metal container.
They didn't need to run up to the shelf. You left their dinner on the floor. They'd have found the rest eventually.

I agree with the others, mice. You need maximum security storage containers and sweep up any dropped seed.

If its field mice i don't mind, we have put the rest in tins.

we don't tend to get many groundhogs in the UK. unless you mean hedgehogs... i have seen the little (not so) mouse in question... more house mouse size than field. if it wasn't for the tail would have taken it to be young rat.
