Anyone know of a quick way to put soil into plant pots without getting hands too dirty or spilling soil all over the floor?

scoop the soil with the pot.
Use a trowel
Put gloves on.
Hi you could always cut a 4 pint plastic milk container - just leave the handle and enough of the container to use as a scoop - then at the end recycle the container.
Also -if you have any polystyrene packing material- break it with your hands into smallish pieces and half fill your pots with that to save compost & help drainage (and keep the plants feet wasrm) !
