what do i do with the flowerstem after it has finished flowering as last time i cut it off and it then took 2 years befor it flowered again.

Cut it off again as it will just die and remain a woody mess. This should have no affect on the plants ability to flower as the flowerhead will not bear seed and therefore not be of any use to the plant Hope this helps
